Niçoise salad

Ingredients

- [A] 1/2 packet Vegetable Stock Powder
- [A] 60 ml olive oil
- [B] 1/2 packet Vegetable Stock Powder
- [B] 600 ml water
- 50 g cauliflower (small florets)
- 5 snap peas (trimmed)
- 2 soft-boiled eggs (halved)
- 1 slice smoked salmon (bite-sized pieces)
- 2-3 anchovies
- Olives to taste
- Salt to taste
- 50 g broccoli (small florets)
Directions
- In a small pan, add ingredients [A] and heat over low flame, stirring until lightly colored. Let it cool.
- In a pot, add ingredients [B] and bring to a boil. Cook each vegetable separately until tender, then drain.
- Arrange the cooked vegetables, soft-boiled eggs, and smoked salmon on a plate. Sprinkle with salt, scatter the olives and anchovies, and drizzle with the prepared oil from step 1.
